Farmers Kale With Smoked Sausage (boerenkool Met Worst) in Vancouver

08-Jan-2001: Today Ton was in the mood for a traditional Dutch winter recipe ("winter kost"): boerenkool met worst. The only non-original ingredient is the sausage (can't be imported) but a Polish sausage (available at Save On Foods) was an excellent substitute.

The main ingredient is "boerenkool" (in this case it was canned). The best boerenkool is a fresh harvest after a frosty night ...

After the potatoes, bacon and "boerenkool" were mixed together it was sprinkled with "Roma cheese (kind of a Parmesan cheese). The sausage was put on top and then it all went in the oven for about 15 minutes.

Hmmmm ... looks and smells good. The cheese was probably not a good idea (tasted weird). So Ton scooped that part off ...

P.S. The beer is Boddingtons (Manchester). Excellent beer in combination with "boerenkool".

After the sausage was sliced the dish looked really authentic. Enjoy.

There was enough for 2 huge portions ... so the left over went in the fridge for the next day (even better).

Last note: however you make the boerenkool ... it's never as good as your mom made it.

Farmers Cabbage With Smoked Sausage (boerenkool Met Worst)


      Yield: 6 servings 

  
      6    Good sized potatoes 
      1 bn Of kale (to fill a 2 qt. 
           -pot) 
      1 lb Smoked sausage 
      3 tb Butter or margarine 
           Salt and pepper 

Peel, cook, and mash potatoes. At the same time, chop kale finely, cook until tender. Dice and cook sausage. Put kale into a blender with enough of the cooking water to make a thick slurry. When done, add to the mashed potatoes. Add cooked sausage. Add butter. Salt and pepper to taste. Mix well and serve piping hot. For a more festive appearance, put into a casserole dish, garnish with slices of Oude Gouda (Old Gouda) or a medium cheddar and sprinkle with paprika. Place in medium oven until cheese melts and begins to brown. Then serve or take to your pitch-in.
